Our biscuits aren’t particularly newfangled. Yes, we do make apricot biscuits in summer and chipotle bacon biscuits during the winter. But at the core, they’re not so different from all homemade biscuits. We think ours are delicious because we take technique and ingredients so seriously. We are methodical about how we cut butter into flour, and we’re also attentive to the fat and protein content of those ingredients. We source many of our ingredients locally, from the flour, which is produced in Ellicott City, to the apricots and bacon, which come from the outstanding producers who work alongside us at markets throughout the year.
